Ingredients:
  • 1/4 cup rajma, soaked overnight and drained
  • 1/4 cup arhar dal , soaked for 15 minutes and drained
  • 1/4 cup masoor dal , soaked for 15 minutes and drained
  • 1/2 cup bottle gourd cubes
  • 1/2 cup red pumpkin cubes
  • salt to taste
  • 1/2 tsp turmeric powder
  • 1/2 cup finely chopped tomatoes
  • 1/4 cup finely chopped coriander
  • 1 tsp garlic paste
  • 1 tsp coriander seed powder
  • 1/2 tsp garam masala
  • 1/2 tsp chilli powder
  • 2 slit green chillies
  • 2 tsp lemon juice
Method:
  • Combine the rajma, toovar dal and masoor dal with 1½ cups of water, bottle gourd, pumpkin, salt and turmeric powder in a pressure cooker and mix well and pressure cook for 4-5 whistles.
  • Once all the ingredients get cooked properly mash the dal lighlty using a masher.
  • Now add the tomatoes, coriander, garlic paste, coriander powder, garam masala, chilli powder, green chillies and lemon juice, ittle water and mix well.
  • Cook them on mediun flame for 5 minutes and stir continusloy.
  • Garnish it with corriender leaves and serve hot with rotis or steam rice.

Urad Dal with Paneer is a very smart recipe that is made from daily ingredients. Just remember to soak urad dal for 2 hrs in advance. It is the best healthy option to be served with roti or paratha.
Ingredients:
  • 3/4 cup urad dal
  • 1/2 cup small paneer cubes
  • 1/2 tsp haldi
  • Salt to taste
  • 1 tbsp Oil
  • 1/2 tsp Jeera
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped tomatoes
  • 1 tsp finely chopped green chillies
  • 1/2 tsp chilli powder
  • 2 tbsp finely dhaniya
Method:
  • Soak urad dal in advance for 2 hours and drain it well.
  • Combine the urad dal, ¼ tsp turmeric powder, salt and 1¼ cups of water in a cooker, mix well and cook it for 1 whistle.
  • Keep the cooker aside till all the steam escapes. Drain the mixture and leave it.
  • Take a pan, add some oil and sauté paneer for 2-3 minutes till it turns light brown in color. Keep it aside
  • In same pan add cumin seeds.Once they crackle add onions and sauté on medium flame for 1-2 minutes.
  • Add the tomatoes, green chillies, chilli powder, remaining ¼ tsp of turmeric powder, 2 tbsp of water and salt, mix well and cook on a medium flame for 2-3 minutes, keep stirring.
  • Add the cooked urad dal and mix well and cook for 2-3 minutes on medium flame.
  • Add the sautéed paneer and coriander, mix well and cook on a medium flame for another 1 to 2 minutes, stirring occasionally.
  • Serve hot with Butter Roti or Paratha.

Ingredients:
  • 1/2 cup chana dal, soaked for 4 to 5 hours and drained
  • 1/2 cup finely chopped methi
  • 1/2 cup grated carrot
  • 1/2 cup finely chopped spinach
  • 4 to 6 curry leaves
  • 1 tbsp finely chopped green chillies
  • 1 tsp grated ginger
  • 2 tbsp curds
  • salt to taste
  • 1 tsp oil
  • oil for cooking
Method:
  • In a grinder, grind the soaked and drained chana dal to a form a coarse paste and add little water if required.
  • In one bowl add fenugreek leaves, carrot, spinach, curry leaves, green chillies, ginger, curds, oil, salt and a little water and mix well.
  • Pour a little batter on a greased pan with oil and spread it uniformly to form a circle.
  • Cook on both the sides, using a little oil, till they turn golden brown in colour.
  • Serve immediately with tomato ketchup or green chutney.

Ingredients:
  • 1 cup boiled Laxmi Toor Dal
  • ¾ cup sugar
  • 3–4 pieces chopped dates
  • 2 tbsp dried coconut
  • 1 tbsp charoli
  • ½ tsp cardamom powder
  • ½ tsp nutmeg powder
  • 1 tbsp raisins
  • 1 tsp poppy seeds
  • 1 cup refined flour
  • 2 tsp ghee
  • Oil for frying
  • For garnishing-
  • Saffron soaked in hot water
  • Cardamom powder
Method:
  • In a bowl add sugar to the boiled toor dal and mix well. Add dates, dried coconut, charoli, cardamom powder, raisin and poppy seeds to it. Mix well and prepare the stuffing. Let it cool for some time.
  • In a bowl, combine flour and ghee to prepare the dough. Take small portions from the dough and roll into puris. Place the stuffing on one puri and seal it with another puri. Press the sides and bend it to make the ghughra. Fry the ghughra in ghee till it turns light pink. Sprinkle saffron soaked in hot water and cardamom powder on it.

Ingredients:
  • ½ cup moong dal, soaked in water for an hour
  • 2 tbsp oil
  • 1 medium tej patta
  • ½ tsp cumin seeds
  • 1 medium onion chopped onion
  • ½ cup finely chopped tomatoes
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • ¼ tsp red chili powder
  • ½ tsp coriander powder
  • ¼ tsp garam masala powder
  • 2.5 cups water
  • 2 tbsp chopped coriander leaves
  • salt as required
Method:
  • heat 2 tbsp oil in a cooker, add 1 medium tej patta, ½ tsp cumin seeds. saute till the cumin seeds start crackling.
  • Now add the chopped onions and saute them till they get light golden and add 1 tsp ginger-garlic paste, chopped green chilies. stir and saute them properly.
  • now add chopped tomatoes, ¼ tsp turmeric powder, ¼ tsp red chili powder, ½ tsp coriander powder and ¼ tsp garam masala powder stir and saute till the tomatoes soften, become pulpy and you see oil releasing from the sides.
  • add 2 cups water and salt as per taste. stir very well. cover and pressure cook for 15 minutes on a medium flame till the beans are softened thoroughly. when the pressure settles down on its own, open the lid and check the beans.
Tempering the Dal:
  • heat 1 tbsp oil in a small pan and add cumin seeds first.
  • switch off the flame and then add a pinch of asafoetida and ¼ tsp red chili powder. stir.
  • add this tempering to the green moong dal. stir well.
  • add chopped coriander leaves.
  • serve whole green moong dal with steamed rice or chapatis.

A traditional Rajasthani dish, dal baati is a combination of spicy dal and crunchy baatis.The dal is made up of 3 different kinds of dals namely toor dal,chana dal and urad dal.
Ingredients:
For Dal
  • 1/4 Cup of toor dal
  • 1/4 Cup of urad dal
  • 1/4 Cup of chana dal
  • 2 Tomatoes
  • 2 Green chillies
  • 1 Piece ginger
  • 1/2 Tsp garam masala
  • 1 Tsp red chilly powder
  • 1 Tsp dhaniya powder
  • 1/4 Tsp turmeric (haldi powder)
  • 3 Tbsp chopped coriander leaves
  • Salt as per taste
  • 2 Tbsp ghee
  • 2 Tsp jeera
  • 1/4 Tsp asafoetida
For Baati
  • 1 Cup wheat flour
  • 2 Tbsp sooji
  • 2 Tbsp Ghee
  • 1/4 Tsp ajwain
  • 2 pinches of baking powder
  • Salt as per requirement
Method:
  • Soak the dals for about 1 hour and then pressure cook them in 2 cups of water on a medium flame for 3 whistles.
  • Make a puree of tomatoes,green chillies and ginger.
  • Now take a kadai put some ghee in it and heat it on medium flame.Then add jeera and hing.By stirring it on a low flame add dhaniya powder and turmeric powder.
  • After that add the puree and mix it properly. Put some chilly powder, salt and garam masala.Fry until ghee come on the top.
  • Add dal and mash it properly.Add some water to it for consistency.Let them boil for some 2-3 minutes.Switch off the flame but before that add some coriander leaves.
  • Now for baati,take a bowl, mix wheat flour,sooji,ajwain,salt and ghee.Mix it properly then add a little water and make a dough that it a bit stiff. It should have cracks on it.
  • Set the oven temp on 190 degree C, pre heat it and on the other side 8-10 equal sized balls and flatten it for easy cooking. Bake these baatis for about 10 minutes. After 10 minutes turn them and again bake until they turn golden.
  • Before serving,heat some ghee in the kadai,dip the baatis in it and serve it with the prepared dal.

Dal Fry

Dal fry is something which is famous for its taste and the amount of nutrition present in the dal used.Dal fry is made of variety of spices to make it delicious and tasty.
Ingredients:
  • 1 Cup Toor Dal/Arhar Dal
  • 1 Cup
  • 2.5 Cups of water
  • 1 Tsp of salt
  • 1/4 Tsp turmeric powder(haldi powder)
  • 3 Tbsp ghee or butter
  • 1 Cup mediumly cut tomatoes
  • 1/2 Tsp Jeera seeds (cumin seeds)
  • 1/2 Tsp Rai(mustard seeds)
  • 1/8 Tsp hing
  • 2 Dry red chillies(whole)
  • 1 Cup mediumly cut tomatoes
  • 2 bay leaves
  • 1 Tsp green chilly (finely chopped)
  • 2 Tsp ginger (finely shredded)
  • 2 Tsp Cilantro finely chopped
  • 1 Tsp of sugar
  • 1/2 Tsp of amchoor powder
  • 1/4 Tsp of garam masala
Method:
  • Take a cup of toor dal/arhar dal wash it thoroughly and soak it for around one hour in a water(3 cups).The volume of the dal will get doubled after it is soaked in the water.Now drain the water.
  • Take a pressure cooker,put the dal in it with 2 or 2.5 cups pf water adding turmeric powder and salt(as per taste). Cook it on a medium heat.
  • Turn the heat to medium flame once the pressure cooker starts to steam.After turning off the heat wait till the steam escapes before you open the cooker.Thickness of the dal should be seen.
  • Now take a sauce pan and put some ghee in it. Once the ghee is heated add some cumin seeds,rai seeds,hing and red chillies (whole).After sometime add bay leaf,green chillies,chilly powder and ging in it and stir.
  • After that add some tomatoes,sugar and salt.Stir it and cook until the tomatoes become a little tender.
  • In the end add mango powder(amchoor),garam masala and cilantro and cook for a while.
  • Now you can pour this mix over the dal and mix it properly.
  • Your dal fry is ready now.Serve it with plain rice or bread.

Lasson dal tadka one of the best version of dal tadka taht have flavors of garlic in it. The lassun dal tadka is made from tuvar dal add garlic and onions in the dals while preparation only a slight tang taste you can get by adding some lemon juice to dal.
Ingredients:
  • 1 cup toor dal
  • 3 cups water
  • 1.5 tbsp garlic
  • ¼ cup finely chopped onions
  • 1 to 2 green chillies
  • ½ tsp cumin powder
  • ½ tsp turmeric powder
  • ½ tsp lemon juice
  • salt as required
  • 1 tbsp chopped coriander leaves for garnish
  • tempering the lasooni dal
  • 1 tsp finely chopped garlic
  • ½ tsp cumin/jeera
  • 1.5 to 2 tbsp ghee
  • ½ kashmiri red chilli powder
  • pinch of asafoedita
  • ½ tsp kasuri methi
Method:
  • Add rinsed tuvar dal, onions, garlic, green chilies, turmeric and hing in the pressure cooker.
  • Add water. pressure cook the dal for 10 to 12 whistles
  • Cook the dal till you get a smooth mashable consistency.
  • Mash the dal with a spoon or wired whisk.
Tempering the Dal:
  • heat ghee in a small pan.
  • Once the ghee get heated up add cumin.
  • then add garlic and saute it for couple of seconds
  • switch off the flame and add red chili powder, hing and kasuri methi.
  • pour the entire tempering on dal.
  • garnish with coriander leaves and serve lasooni dal tadka hot.
